Im new to the USB C game given my 2014 MBP had all the ports I needed.

I do remember some cheaper ports causing damage to the MacBooks recently.

Can you recommend a good one? I'm after USB and HDMI really. Don't need much else, is it best to just stick to the Apple one?

I'm going to avoid any third party dongles/docks that powers the MacBook Pro. It maybe a must have for the 12 in MacBook but there's no need with the Pro since it has more than one port.

I would also not use anything that fits too tightly.

I'm only looking for USB A to C and HDMI. I don't need to power it as it has a second port.

CalDigit is what you want. I got mine last week and it is solid. You can almost get by with the $80 Apple USB-A/HDMI dock + a USB hub, but it would look a mess. The CalDigit has about all the ports you will need.
