I was out looking for a USB C SSD to store and edit my video footage. I saw the sandisks had two variants. There was a 500mb/s version and a more expensive 1000mb/s. I was wondering if I would benefit off the 1000mb/s version. I mainly edit 1080p footage but I do make 4K videos sometimes.

The slower one uses a USB3 enclosure. Expect reads in the 430+MBps range with it.

The faster one uses a USB3.1 gen2 enclosure. Expect reads in the 965+MPps range with it.

The faster one will cost a little more.
It will also run somewhat warmer.
But if you'd like "double the speed", it's probably worth it.
