After upgrading to Tahoe it seems my Usb-C hub is not working at all except to provide video signal for my monitor.

Anyone else have this issue? If so how did you fix it?

I'm also having issues with my USB-C hub.

I'm using ATEN US3342 and my webcam doesn't work well after the upgrade.

I don't know if this is related or not, but I find Tahoe turns off power on USB ports upon sleep now. Before, my wired USB mouse's optical light would stay on. Now it turns off when I sleep my M1 mini.

Tahoe also broke a utility that controls USB hubs. So Apple changed some things with USB handling.

Since previous operating systems, putting or letting your Mac to sleep will do unimaginable things to all your additional hardware and apps that depend on it. I would then suggest to not let your Mac sleep, only the monitors.
