I have two LG monitors with USB-C ports that allow charging. Is it problematic or harmful for my MacBook Pro to use charging from both screens? Does the MacBook use power from only one screen? It’s a MacBook Pro M3 Pro 14.

If that was a problem it most assuredly would be reported in multiple places. Apple would also provide warnings about doing so. So no, it will not be a problem.
 
MBP will charge from source providing highest rated power output when two sources are connected. If sources provide same rated power output, it choose first connected.
