Okay, so at the moment I have a rMBP and I wanted something a bit more portable, so I've ordered the 1.3 rMB, the only question info have is I charge my iPhone via my MacBook over night, how would this work with USB-C?

I'd have one port, is there an adapter available in the UK that will allow me to use a USB port and charge simultaneously

the video adaptors will let you do that but you probably don't want to pay $80 for it. Video adaptors have USB-C power pass through, USB-A and either HDMI or VGA.

for 80 dollars, you are better off buying a wall-charger, much faster charging time at a fraction of the cost
