Hi,
skimming through the Power Supply Options that exist for MagSafe Macs, I noticed that recently these types of cables for using 60W+ USB-C Chargers popped up on ebay or amazon. For example this one: https://www.ebay.com/itm/USB-C-Type...le-with-MacBook-Pro-MacBook-Air-/352674684493
I love the fact that I don't have to rely on the ever-breaking Apple Charger Cables for Magsafe with this solution and have a charger that I can use for other devices as well.

So what I know about the Magsafe standard is that the power supply "communicates" with the MacBook and then decides whether and what amount of energy to send to the MacBook.
For USB-C it seems to be the same, which encourages me to trust that using a cable like this along with a decent USB-C Charger will not harm the MacBook or make the battery explode.

What are your thoughts on this? Are these cables safe to use?

I wouldn’t touch that with a 10 foot pole.

USB-C is very picky on how it power negotiates, and Chinese built USB-C power supplies usually cut corners. And MagSafe doesn’t do any negotiation automatically that USB-C needs. Even if it negotiated correctly, I wouldn’t necessarily trust the power supply.

These sorts of adapters often work well until they break your computer.
