I have a Macbook 2018 (intel) and two external monitor, one connected via HDMI with its own power and a portable USBC powered one. Is there a USB-C docking station that would have both HDMI and a USBC port that would power an external monitor? There are lots of docking stations out there but everyone one I have looked at says it won't work.

Or do I have to go the thunderbolt route?

For macOS, you can't connect two displays to a USB-C dock unless one of the displays is connected using DisplayLink. Thunderbolt is preferable.
