I've searched and failed to find a definitive answer to my question. I have a Mid 2010 21.5" iMac and want to use it to extend the desktop from my VGA PC laptop. It's clear that I can do this with a 27" model but need to understand if it's possible with my model. If possible, what cable/adaptor do I need? Thank you

It is not possible with the 21.5" iMac. Even if it was, your laptop would not be compatible as a digital signal would be required.

No, the 2010 21.5-inch iMac does not support Target Display mode, only the 27-inch iMac from that year.
IIRC, it's a limitation of the mini DisplayPort, as implemented in the 21.5-inch models. The target display limitation was removed in the 2011 model, I suppose because of the addition of thunderbolt.
