So, my brother’s cellphone subscription includes an eSIM for Apple Watch. Since I have an Apple Watch and he doesn’t, he offered me to use his eSIM. Of course, I would be happy to use his data, but I’m not interested in receiving his phone calls or reading his text messages. Is there a way to turn it off with a cellular Watch?

I can’t try it out because I don’t have a cellular Watch at this moment – also not sure if it’s worth getting one even if I don’t have to pay for the cellphone subscription. Since it’s still a quite expensive upgrade given I have my phone with me 98% of the time.
 
Since the sim is tied to your brother's cellular plan, you would receive his calls and texts when you had cellular turned on. Of course you can turn cellular service off on Apple Watch so that the watch is synced with your iPhone, but that's the same as having a GPS only watch.

The cellular version of Apple Watch costs an additional $100. And if you usually have your phone with you it probably wouldn't be worth buying the cellular model. I have three watches and I always get the cellular model. T-Mobile charges me just $5 per watch to add it to my account. I have situations where I prefer not to have my phone in my pocket when working outside so I consider it worth it for me.

OK, thanks for the response! I guess there’s no way to avoid that. In that case I prefer not to have it tied to his number, otherwise it might lead to awkward situations.

At the moment in my country I have a very cheap subscription, but it doesn’t offer eSIM for the Watch, if I would want to add that, I would need to get a regular subscription which is waay more expensive, so I’m not going to do that for the time being.

My other problem is that I have a non-cellular watch (Series 6) at the moment and I don’t really want to get a new cellular Series 8 because the added features compared to the 6 are pretty minimal for my use (except for cellular). I might get the 9 later this year and then be sure to get the Cellular model just in case. (I could try to get a cellular 6 or 7 second-hand, but they are pretty rare because cellular wasn’t offered in my country at all at that time.)

You're most welcome! As you said you usually have your phone with you, a cellular version wouldn't be very useful I guess. I have two 8s and one 7 and they all have cellular which I enjoy when I need it.

I don't know where you're at but it's interesting that you said your country didn't have cellular in the time of the 6 and 7.

What Carrier does your brother use? Do you use the same Carrier? Any way to consolidate so the sync could be pushed to your iPhone? Phones might be cheaper, too. Totally dependent on the carrier, though. And how you get along with your brother, of course!
