I need to upgrade my wife's cracked screen 7 Plus and debating on a new 11 or used XS Max. I don't really care about new vs used but I'm having a tough time debating on whether Ultra Wide and Night Mode is worth the trade off over a 6.5" OLED screen.

You guys should go to the Apple Store and have her see the size difference between all 3 phones. The Max is massive. Then she can decide.
She never had an OLED screen so she wouldn't miss it. Always go for the newer processor for IOS update longevity since it looks like you don't upgrade yearly. 128GB is more than enough for a lot of people but I'm saying that without knowing what she'll use it for. If storage is the priority then you already have your answer.
