I had a second line set up on my Xr on the eSIM but deleted that account but later set up a different second line once again using the eSIM.
Now in Settings>Cellular, I see both my primary and secondary listings and everything works ok, but under them I also see the line which reads "Used as Secondary" and then "No SIM" on the same line. I assume it has something to do with the deleted line. Is this normal or should it have been deleted when I deleted the original secondary eSIM that I was using? There seems to be no way for me to delete it.

Anyone know anything about this?

Leave it there, no harm to your phone
Or you can reset network setting and re-add the e-sim, I think
I did had something like this, 2 No Sim, somehow they didnt make anychange to my phone. As much as I can remember just touch it and it pops up a menu.
 
I am assuming that the line that says "Used as Secondary" is left over from the first secondary eSIM that I had been using and deleted. As I said, everything is working ok but am wondering why that is still there and if it is possible for me to delete it. When I click on that line it brings up a box with the following: Cellular Plan No Longer Available, Do you want to update the contacts that were using this line to use your other line? Then it gives the 3 choices of "Use Primary," "Use Secondary," and "Close."

Ah yes.
Cause Apple double sim works like this: they remember which sim you choose to call or message a contact, then when you do that again they will automatically use that sim.
The box said that mean what sim you want to use when call for the contacts that the deleted E-sim used to call.
If you dialed (or mess-ed) XXXX by that e-sim, now you choose the one to dial (or mess) XXXX in the future, physic or new e-sim. After that it will be gone

Can I once again program the eSIM using the same eSIM card that I used for the number that I have on the phone now? Or do I need to purchase a new eSIM card again? Or is the eSIM still set up in the phone even after a factory reset?

Manual Factory Reset: you will have option to keep the e-sim in the phone. Everything else will be wash away
Restore using the computer: use the QR code of the e-sim on your phone now (i think they printed it or send it to you via email) again. The QR code can be re-used on the same phone, after factory reset.
And you can ask the operator staff to print or send the QR again, don't need to purchase a new one.
The QR works as the small unique numbers printed on the physical sim. But only for the same phone
