We moved and somehow my keyboard and mouse got separated from the computer.

I saw some cheap wireless and wired keyboards at Target along with a wireless mouse.

They are not Apple specific layouts.

How well will those work?

Wired and wireless keyboards and mice that aren’t Apple specific work well with Macs.

You can usually get good ones from reputable brands like Logitech, Microsoft, and Dell at reasonable prices compared to Apple.
 
You should be fine with just about any keyboard/mouse. Using a very cheap wireless Microsoft keyboard/mouse on my 2014 Mini because it's just a media server and I mostly control it with screen sharing. With a Windows keyboard, the ALT key is the Mac Options key and the Windows key is the Mac Command key.

For mice, there's really no problem. I use Windows mice on all my Macs as I prefer the standard three-button design with a scroll wheel.

Works the same as the Apple ones. Wired (USB) is plug-n-play as they following the USB HID standard. Wireless, so long as it comes with the little USB transceiver, also "just works".
