Is it possible to hook up a 21" Cinema Display to the iMac Retina 5k? We are thinking about upgrading from Early 2007 Mac Pros to the new iMacs and using our old displays as a second screen for tool pallets, etc. Thanks in advance.

If you're talking about a genuine Apple display, it's probably a 20", 23" or 30". Any of those could be connected to an iMac5K with the mDP->DVI-D adapter (single link for 20" & 23", dual link for 30").

The single link is part MB570Z, dual is MB571Z (followed by a version like /A or /B).
