I have a 2019 Macbook Pro. And 2, 2014 iMac's. I have been using the apple adapter and apple cable to plug one iMac into my Macbook and make it a 2nd screen.

I have a 3 questions:

- I have to change my keyboard to the iMac and select Command F2 (sometimes 5 times to get it to work) every time I want to have a duel monitor to accept the signal. It is pretty annoying that it just doesn't send the signal like a normal monitor would as soon as both are plugged in.

- Can I use both my iMac's as 2nd and 3rd monitors at the same time with my Macbook?

- If yes, do I have to buy the expensive adapter and cable again or is there a cheeper 3rd party option that works just as well?

It is not officially supported for your iMacs, but check out Luna Display that does it via a dongle. I’ve not tried it out myself, but seems OK, just research it more before buying.
