Is this possible ? Looking to upgrade and would love to use my Late 2015 Imac as a display with Mac Studio.

2009 - 2014 support target display mode.

could look at Luna display instead however not going to be as good as simply putting a monitor onto the studio.

so will my mid 2015 work as just a display?

You can use Airplay to Mac but you would have to boot with OCLP. Your system supports Monterey but Monterey doesn't allow you to use Airplay to Mac. OCLP allows you to get around that.

The other approach would be to create a virtual display on your Studio and then screen share into it from your iMac.

You should be able to. So this is a connection through Luna Display from MacBookPro15,1 (thunderbolt 3) to MacBookPro11,4 (thunderbolt 2). The only issue is that the detected screen is 13.4 rather than 15.4 and the resolution is 1440x900 hidpi. The old iMacs with thunderbolt 2 should work as secondary screens trough thubderbolt 3--> thunderbolt 2 converter. It also works great from my laptop (Windows) to the MBP15,1 through the thunderbolt 3 cable.
