I use an iMac at work in a Windows dominated environment. Office 365 for Mac is decent enough that I usually don't have issues exchanging files with colleagues on a PC.

However, I'd like to use a mobile device for meeting and was thinking of an iPad Pro (over a MBP).
I'm not sure how robust Office apps for iOS are. Most apps are now running in the Cloud anyways so I'd be going through a browser.

I'm just curious if anyone has had experience going all-in with an iPad in a PC work environment.

Microsoft hasn't yet updated their Office apps to support the new iPadOS cursor, so if that's a dealbreaker, you might want to hold off.
