I have an iPhone in the USA with a 10GB shared plan.

How does this work in Europe? Specifically Spain and Italy... going to be there for 2 months. I want to be able to use some data.

You'll probably have to buy some sort of package from your carrier. Using your phone abroad can be expensive.

If you are able to unlock the iPhone through your carrier you would be able to purchase a local SIM card for each country you visit. Otherwise you can purchase an international plan through your carrier which tends to be pricey.
