I search long and hard, not for whether or not you could, you can in the US. But rather how to redeem on the iPhone itself without using iTunes on a laptop. If you do a google search you will not find the easy procedure below:

Here’s what you do: open the App Store app on the iPhone, go to the Featured tab, scroll to the bottom, and tap “Redeem.” Now, type in the code on the back of the card. And then it will ask you to sign in. It automatically knows you amount. Then when you go to buy it takes it off the gift card total.

Hopefully this helps someone.
 
Not to be a jerk, but the ability to redeem a gift card from the iPhone/iPod touch has been around since iOS 1.1.3 from the iTunes App, though the ability to redeem a gift card from the App Store didn't come until iOS 3.0

This info and How-To took me less than 5 minutes to find using google and the phrase "redeem itunes gift card from iphone"
 
A quick FYI to add, that not everyone may be aware of;

The Mac App store takes charge from the same source as the iTunes/App Store/Book store. Be aware of this if you plan on saving a gift card
