Using Macbook in sleep mode and ideal temperature and fan speed.

I am using a 2010 Macbook hooked up to a 21" HP Monitor in a clampshell mode. Will I be harming my mac if I use it in the sleep mode instead of shutting it down always? Also let me know the ideal temperature in centigrade and fan speed in rpm which is in the tolerable range for this macbook.
