I use Contacts and iCal on my Mac and Outlook on my iPhone. If I get an AppleWatch will everything work correctly with calendar events and emails since I use Outlook on the iPhone?

Outlook has a really good Watch app.

You can read emails and see your calendar, and with certain Watch faces show your upcoming meetings.

My employer used to use the built in iOS apps for mail/calendar but forced us to switch to outlook as part of our office 365 rollout.
 
From my experience, outlook contacts will show up regardless if you use the outlook app or set it up in the email app.
With that said, I had to reset sync data after setting up outlook in order for those contacts to show up
