Of course there is! The option is right there at the top of every message.

I don't know about everybody else, but on mine there is in blue letters upper right "Mark as Unread"?

Make sure to touch 'Details.' Once you do, you should see 'Mark as Unread' in blue text.

Also, if you setup gmail through the "exchange server" setup rather than the "gmail" setup, you will get push emails.

Not as far as I know. You can lock the whole iPad, but not specific apps. One caveat is that you can lock out access to certain apps in the Settings once you've turned on User Restrictions, but you'll have to go in to the settings every time you want to enable/disable access to the email app.
