I have a Mac Pro 2.66GHz Quad Core. I use Aperture frequently and iMovie. Is there a utility that I can download to watch how the applications are utilizing the multiple cores?

I'd like to know if these apps or others from Apple are designed for the Intel multi-core architecture and are written for multi-threading.
 
iStat Pro is the best widget ever for this. Very easy just to bring the widgets up to check CPU usage and get rid of them. Takes a second or two. I find it much easier than using the activity monitor.
 
And if you do not know how to find your activity monitor, go to Applications->Utilities->Activity Monitor

or just Spotlight it.

Then I believe you hit :apple: +1 and it brings up all the statistics
 
I use iStat Pro, but I've never noticed if it breaks down the CPU to the utilization in each core.
 
Don't forget you can have Activity Monitor running (but hidden) and have the Dock Icon showing the activity of the various cores. I have this running all the time as it's handy to see how busy my computer is without any hassle

Activity Monitor : View -> Dock Icon -> Show CPU History
