Yes, I'm aware that 3rd party (Moshi iVisor) products have historically been available for this, and that future products are forthcoming.

But has anyone used a service that applies the a custom matte plastic layer professionally? I figure there has to be someone out there doing this, I just haven't found them yet (but maybe the MacRumors hivemind has?)
 
Any matte layer will degrade the quality of the image substantially. I would advise against it.
 
Why?

A custom matte conversion on the MBPR display doesn't just void the warranty, it also nullifies all the improvements Apple has done to it. Instead of much-reduced reflections, you get the problems that affect matte displays everywhere: diffused glare affecting the contrast and readability of the entire screen, not just the area immediately affected.
