Hi All... Quick question. I have an M1 iMac running Montery. If I upgreade to Ventura and decide to go back to Montery can I use MA to restore from my last TM back up which has Montery on it? When it restores does it revert back to Montery from TM or will it restore onto the current OSX which is Ventura ? Thank you !

I recently created Monterey on a HDD while keeping Ventura on my system SSD. Initially I tried retrieving 12.6 from TM, but was unable to. I was given a message that I had to use an bootable install and then use Migration Assistant to retrieve from TM. I was only interested in an environment for Photoshop due to the print system in Ventura not dealing with print presets properly.

I had a previously saved bootable Install image and used that to created Monterey on the HDD and then downloaded PS from Adobe. I made sure the new environment had access to my other drives so I would have access to the images I would want to print along with ICC profiles for my displays and printer.

On a New M1 MBA that just arrived with Ventura, if I use Option-Shift-Command-R: will this restore Montery that came with this laptop from Day one or will it install Ventura over the internet?

I don't think Internet Recovery is a thing on Apple Silicon, you'll have to create a memory stick and boot off that.

Thanks Guys, Correct no more internet recovery on M1 Macs. I had a memory stick with Monterey on it, I went to start up options, erased Macintosh HD then restarted and choose the Memory Stick with Monterey and DONE! Installed fine! Thank you for your replies!
