I have an opportunity to use an iPhone 4S on my Verizon line with current 4G LTE Unlimited plan (currently using a crappy LTE phone).

My concern is that switching to 3G would make me non-eligible to switch back to unlimited LTE if I choose to pick up an iPhone 5 in the future. Has anybody here had any experience with going back and forth between 3G and LTE data plans and whether they were able to keep unlimited data?

Right this second there are no issues switching from 3G to LTE and vice versa. The only time you'll have an issue is if you switch from a smartphone to a dumb phone. Then you'll loose you unlimited data
