I'm having a strange issue the past few days.

After a day of video playback (YouTube, Sling, etc), suddenly audio from videos will get choppy and I won't get any video at all, it will be a single frozen frame. Switching applications doesn't matter, none of them will play back video.

A reboot fixes the problem.

I am running MacOS 10.15.5 on a 16" MacBook Pro
The only recent changes to the machine I've made was I added an OWC Thunderbay 8 and running OpenZFS....

Any ideas?

It could be caused by high GPU /CPU Temps , especially if you got an external monitor connected.
You could install e.g. Macs Fan Control , iStats menus etc. to monitor the Temps and set the fan(s) according the GPU/CPU Temps so your MBP will run less hot.

What happens if you disconnect the thunderbay and STOP running openZFS....?
