I'm sure this has been asked a few times, but I am not getting a clear cut answer. I've asked in stores to and they don't give me a clear answer.

How much space does a video take up, as far as MB/minute? Also, can you change the settings on the video to make it of lesser quality? Like drop it from 1080 to 720?

I'm not going to be filming movies, but I'd like to be able to have a decent amount of space for some short videos when a time arises.

No, you can't select 720, it's only 1080.

It's not a set in stone thing, there's no way to truly tell you.

Many factors can come into play such as audio, the colors and what's going on in the actual videos. Basicall you'll have to wing it unless there is an app out there that does exactly what you're asking.
 
If you want lesser quality(taking up less space) use the front facing camera to record videos, that's VGA quality (640x480?).. And takes up a fraction of the space of 1080p.
