I have just got a new ipad (v3) 64gb wifi version, and I am very pleased.

I wondered if it is posssible to group videos, in the same way as podcasts are?

I have some related videos, which would be easier to access if they were together in one folder, is it possible to tag videos, in the same way as music tracks, to keep them together, in the same way as tracks/albums in itunes?

Basically, you can't synch your video playlists to your iPad.

Assuming you plan to watch non-protected movies (anything BUT regular TV shows and movies purchased from iTunes Store - music videos aren't protected), you'll want to use third-party video players. Many of them offer sometimes excellent playlist functionality. Let me know if you need more info on them and I compile a nice list of them for you (I've tested them all but haven't written a dedicated article on playlists as yet).
