If you swipe up in watch os 9 you have the rings displayed like this

as highlighted by the nice latest macrumors article :)

Previously if you were doing an Apple Watch workout and you wanted to see how it was impacting your activity rings, you had to exit out of the Workout app and switch to the Activity app.
Now you don't have to, because you can get a glance of your activity rings right in the workout display simply by scrolling up with the Digital Crown.

Does anyone know a way to have this set as the default view instead of having to swipe/scroll?

Choose your workout. Hit the Pen icon on top right to edit. Scroll down to workout views. Hit that & scroll down until you see the rings.

Get into the edit workout views menu. Scroll down through all the various workout views, and at the end, there is a reorder button. Tap that, and drag the activity view to the top.

That you! I was trying to do this with an existing workout which is why I couldn't see the option!
