iStat Pro is great (I use all the time), but if you just want to monitor temperatures, iStat Menus might be a good alternative, particularly if you don't really use the dashboard already.

You can also use smcFanControl, it not only shows you the temperature but also lets you adjust the fan's speed to cool it quickly or to slow them down if needed.
