I want to look at the contents of some application bundles. It would be particularly useful for me to see an apps XIB/.nibs. Is there some way to do this?

Right click the application with my one button mouse?

Unless you have a really (5+ years) old mouse, you don't have a one button mouse. From the 2005 Might Mouse onwards we have had 0-button mice (mouses?). You can configure your mouse in the mouse control panel so that clicking on the right-hand side of it does a right-click.

Yeah, I hated that and disabled it.
