I always use safari private browser, so all it needs to remember are my favorites, yet for some reason, if i use Vimeos couchmode , it remembers what i have seen?
anyone else has this issue?

I'm not 100% familiar with the Vimeo app, but i'm assuming couch mode is a web browser inside the app?

I visited their website in 'safari private browsing' and then when you look at a clip there's a button 'couch mode', clicking doesn't make me leave safari private browsing, just change the view of the website (so it seems). that history is being kept by safari :s

Can you please screenshot the history list after going into couch mode then watching 2 or 3 videos?

Are you logged into an account / username on the Vimeo site? It sounds like it's probably the Vimeo site that's remembering what you've recently watched rather than Safari history. Like if you logged on to the Vimeo website on a different computer instead of your iPad, you'd be able to see your recent Vimeo views there as well.
