I used to have vmware a while ago but I ended up uninstalling it. I just downloaded the new free trial and I get an error every time I try to boot into my bootcamp partition. I've read the vmware forums for hours and I have found they are not very good and I cannot fix the issue. Is it possible to just delete all the old virtual disks and whatnot and have vmware just create a new one? Basically, I just want to scrap all the existing records in hope of vmware creating a new virtual disk.

Try going to ~/Library/Application Support/VMware Fusion/ and removing any preference files or Virtual Machine folders.

That should restore the application to a like-new state.
