Whenever I use voice dictation it nearly always removes some words once I turn it off. I see the words on the screen as I’m saying them but when I tap the microphone icon to turn it off some of those words disappear. Is there a reason why? It’s really quite annoying.
 
The dictation algorithm assumes it misheard you so it "cleans up" and removes any words it thinks you didn't actually say.

It's simply doing its best guess, it has no way of knowing with certainty. If it calculates a high enough chance it feels something could be wrong it will change it. Related to that, it also sometimes puts a blue underline beneath changes it makes that it's unsure about.
 
Humorous related anecdote: my wife accidentally turned on Voice Dictation one evening. Upon realizing her mistake, she said “I don’t want that.”

And Voice Dictation transcribed it as “I want that.” 🤪
