I've been trying to use voice isolation during a call but I could never find the controls in Control Center. On Apple's support page, they only mention FaceTime calls. Have I misread or we cannot use this feature during a regular audio phone call?

Always is and always will be. HD voice is about the best that you're going to get through the carriers.
