voice-to-text converter and iPod?

is there any good voice-to-text converter for the Mac?

and can i use iPod as a digital recorder for this?

i have heard about iTalk for the iPod, but is it any good? also, the website does not mention anything about software for converting to text, but how about software by other vendors?

i want to be able to dictate into it in my car and then upload it into any text editor when i reach home.
