Just updated to iOS 16 because I was forced into it by Apple. Discovered that when watching a video in browser, adjusting the volume doesn’t show the volume level on screen. Is there some setting to get that back? If I watch the video in full screen mode then the volume bar shows up when I use the volume buttons.

You weren't forced into upgrading, you could've just ignored the update :/

As for the volume bar function, no, I don't think there's a setting for that.

You are right. I could have chosen to live with an OS version with a known security vulnerability.
Well by that standard, Apple didn't force you into it. The people who found said security vulnerability did.

True I wasn’t forced by Apple.
