I keep reading about VPN On Demand but nowhere explains how to set it up and I can't see any options for it anywhere, so does anyone know exactly what it does and how to set it up?

Basically what I'd like to do is have either Mail or Entourage if need be periodically sync my Exchange email account at work, which needs the VPN connection. I could use Virtual PC but it is real sluggish and I'd prefer to handle all my email in OS X if I can but I don't want to stay connected to work's VPN all the time as it slows things down and then of course you have to watch what sites you visit. ;)
 
open internet connect in the application folder then VPN and configure it.

FYI does not work with PPTP per Apple documentation:

"Apple’s L2TP VPN client can connect you to protected networks automatically by
using its “VPN on demand” feature. VPN on demand can detect when you want
to access a network that is protected by a VPN server and automatically start the
connection process for you. This means that your security is increased because VPN
connections can be closed when not in use, and you can work more efficiently"
