I have a 500gb external FW 800 drive, that can easily store all my data. However, the ONE thing that is stopping me from going back is the mail app. Is there anyway I can restore the file system, exactly as it was? I.e, without it going into a different folder (on my mac or something like that), and make it order in a inbox, sent, outbox etc format? Thanks.
 
What email server do you use? If it's IMAP, most everything is stored on the server (Gmail's "all mail" for example). So you'd just have to export the local mail you have in Lion, which could then be re-imported into the old Mail. The IMAP server would reset up your folders, again with the proviso that they are set up there and not just local folders.

Or you could archive all your essential mail with something like MailSteward and then re-import it.
