I have 2 computers, a MBP and a MPA. I have my entire iTunes library including apps and videos on my MBP and it's synced to my iPhone. How can I get just music to sync between the three of them, without having anything else deleted?
 
In iTunes, with your iPhone connected, click on your phones's icon in the sidebar to open up the iPhone page. Click on each tab in turn; ie, Info, Apps, Ringtones etc, and then make sure that the option to sync those items is unticked.

However, if you've synced with Mac 1 and uploaded some music to your phone that isn't on Mac 2, I don't think that it will transfer to Mac 2 when you sync with that.
