I'm planning on buying a second-hand MacBook Pro 14-inch. I found a good deal, but its coverage warranty is expired. My question is, can you still extend AppleCare+ even after expiration?

No, you can only add AppleCare+ within the first 60 days of owning the computer from new. It's sometimes possible to add within the first year, but the computer must still be under warranty.
