Hi,

New to watch so excuse me if this is obvious,
I have setup shortcuts (not sure are they called complications) on my chosen chronograph watch face but is there anyway of using a different complication instead of the stop watch in the top right location.
 
Open the Watch app on your iPhone > My Faces > tap on the face you want to edit. You can then edit the complications.
Edit: just remembered that the stopwatch is a default complication on the Chronograph face and can't be edited.
 
The chronograph face is designed to be used conveniently, at the wearer's whim, like a regular chronograph watch. You've got four other complication spots -- the other three corners and the date, and if you tap the date you'll bring up the Calendar app.
 
Hard press on the current clock face on your watch, click on "Customize". Click on one of the squares and use the dial to change the complication you want for that spot.

... except for the top right on the Chronograph face, which is reserved for starting the chronograph timer function.
