Watch is not detecting the os8 update

Until today it was paired with an 11 Pro. The Watch wasn’t seeing any update at all. I’m now on a brand new 13 Pro and the watch saw the 7.6.2 update and updated but is saying it’s up to date. Why will it not see the os8 update?

I had this issue, turns out I still had the WatchOS 7 beta profile installed from testing the Apple Watch unlock feature. Have you got the same profile installed?
