Since I upgraded to watchOS 4, I noticed that whenever I listen to Apple Music on my phone (either through headphones or through bluetooth on my car), when I raise my watch it automatically shows the Music app instead of the watch face, even though I didn't start playing music through the watch. Maybe there's some setting I need to change? I haven't found anything though..
Also happens with the Now Playing app. If I'm watching a Youtube video on my phone, when I raise my watch the controls are there instead of the watch face

This is a new feature to WatchOS 4, since you can no longer browse your iPhone's music from the watch.

To enable/disable it, in the watch app, go to General > Wake Screen and then turn on or off the option that says "Auto-launch Audio Apps"
