With this new update, does the workout app now track/map your run? Or can this only be done in the Nike Run Club App. Also, if I was to get the Series 3 LTE, couldn't I just install the Nike Run app and not worry about getting the Nike watch?

The current workout app already does that although it could only be accessed via apples activity app. With the new update, it’s looking like it can finally be shared with other apps.

In answer to your second question...most likely. With series 2 you could certainly do that although the Nike Watch had a couple of custom faces you couldn’t get on the standard watch.
