I saw, that in watch os2 we can choose our own photos to create a watch face. Is it possible to choose a folder (where I store some pictures I want as the watch face) and every time I turn on the screen, a different photo from this special folder will show up as watch face?
Do I have to create a folder on the iPhone then?

The watch only lets you sync over one photo album from the phone onto the watch. But yes you can choose a single photo watch face or album that will change the photo with every screen turn on. It uses the album you synced to the watch.

In the watch app on the phone, go into photos and select which album you want to sync. Or to have it more dynamic choose the favourites option (it's default to this.) That way, any photo you select as a favourite on the phone gets synced to the watch. Making it easy to add/remove photos without having to change which album to sync anytime you want to change it up.
