Watch pairing issue?

I’ve got an Apple Watch series 2 with an iPhone Xs. I restored my phone from an old backup last night, and selected to use my watch with this phone while setting everything up.

However, now my watch is acting like it’s paired, but the app on the phone is acting like it is looking for a watch to pair with.

When I look at my Bluetooth settings on my phone, its not listed.

Any ideas how I can force the pairing? Or will I need to reset my watch?

Reset the watch on the watch.
Then unpair it.

Close all apps on the phone.

Restart the phone and watch.

Re-pair the two.
