I'm considering purchasing an Apple watch, but not sure what colour in the Sport edition to go for. I've noticed that the font colours on the face are different depending on what colour you go for. My question is, can you change the colour of the font displayed on the watch face?

It depends on which watch face you choose to use. Some are more customizable than others. The Modular face is the most customizable with multicolor and 17 different colors: white, red, orange, light orange, yellow, green, turquoise, light blue, blue, midnight blue, purple, lavender, pink, vintage rose, walnut, stone, and antique white.
Not a problem because the colors are customizable.
A bigger problem is the model color. If you get the gold or rose gold model, the bundled sport band has the pin in gold or rose gold, but any additional sport bands that you purchase separately will have the silver pin (except for the sole black band with the black pin).
