My iPhone is running iOS 14 and I updated my watch to Beta 7. I sold the watch the other day and now the person that has it is trying to pair it and getting message their phone OS is out of date and needs to be updated. They are running 13.6..I wiped the watch before I sold it. Did that not restore factory OS?
The watch is on the pair screen and you cannot get past it to get into the settings. What options do I have?

Once the watch (or phone) is updated to watchOS 7 (ios14) wiping it just restores it to factory settings. It doesn’t downgrade to the previous OS. And for watchOS the only way to downgrade is to send it to Apple to do it. The only way he can use the watch is to upgrade his phone to iOS 14 or send it to Apple to downgrade back to watchOS 6.. whatever the latest is.

What do you plan to do for your buyer? Accept the watch back and refund ?

People should not be running beta on primary devices. Apple cautions against this.

I’m not selling mine. I accepted the risk of running it. I’ll update to the standard when they’re available and probably just trade the watch back to Apple for the next series. Same as I do yearly on the phone.

I don’t understand. In your first post, you indicated that you sold a watch running beta software and this is creating problems for your buyer.

if this is indeed the case, what do you plan to do regarding the buyer of your watch?
