Where I am
I often use my mechanical watches, and from time to time, use my Apple Watch, series 6.
When my Apple Watch is not in use, it sits on the Apple charger, on my desk.

Curious, like anything 'on charge', over time the battery will be affected from sitting on the charger for days at a time, no? I ask that, but, even thinking about it, laptops sit on chargers for weeks/months.

So, thoughts...

Yes it will be affected. Go into the watch Settings and turn on Optimized Battery Charging.

Charge it, and the shut it down/turn it off when your not using it. Although I'm not sure if it truly shuts down to be honest? Anyone?

not sure what your real concern is, my S4 (before it got replaced thru AC+) had shown battery health of 86% after 2.5 years of daily use, how many years do you expect to keep your watch?
If the watch is on, and you said you have optimized charging enabled, it'll charge to 100% if it cannot detect a usage pattern, but it will stop and the discharge presumably to maybe 80% and then charge again, so there is constant use of the battery. Go to battery in settings and you can see the battery usage, that should tell you something. Alternatively, turn the watch off when not in use.
I do not see any impact on battery longevity

Yes. During the initial lockdown period when my workplace was closed, I left my watch on the charger for days on end because I wasn't going anywhere and didn't feel the need to put it on. When I started wearing it again, the battery wouldn't even last the entire day. I had to calibrate it a few times to get it back to normal. Now I charge it when I get home, take it off the charger when it's done, and turn it off until the next day.
